A Japanese conveyor-belt restaurant will use AI cameras to combat ‘sushi terrorism’
A viral video trend in Japan has got sushi conveyor-belt restaurants racing to prevent food tampering. One chain, Kura Sushi, said it will use artificial intelligence to look for “suspicious opening and closing of sushi plate covers,” Nikkei Asia reported this week.
Kura Sushi plans to start upgrading existing cameras, which are used to track the dishes customers take from conveyor belts to determine their bill, by early March. If the system detects suspicious behavior, it will alert employees.
“We want to deploy our AI-operated cameras to monitor if customers put the sushi they picked up with their hands back on the plates,” a spokesman told CNN. “We are confident we will be able to upgrade the systems we already have in place to deal with these kind of behaviors.”
Many folks in Japan have been outraged by a trend dubbed “sushi terrorism.” Videos have shown people carrying out unhygienic acts, such as licking the spoon for a container of green tea powder. Other videos have shown patrons dumping wasabi onto sushi as it passes by on the conveyor belt.
Another video, which apparently has more than 98 million views on Twitter, showed a person licking the top of a soy sauce bottle and the rim of a teacup before putting them back at a branch of the Sushiro chain. They also licked a finger and touched a piece of passing sushi. The clip and the response to it caused the stock of Sushiro’s parent company to drop almost five percent.
Sushiro said it replaced all the soy sauce bottles and cleaned every cup at the affected restaurant. Like other conveyor-belt sushi chains, it’s enacted other policies like only making food to order to deter tampering and assure hygiene-conscious customers that restaurants are clean.
Kura Sushi has used AI in other ways. In 2020, it emerged that the company was using an app that can grade tuna. At least at the time, Kura Sushi was buying most of its tuna from outside of Japan. The app was said to help it evaluate the quality of the cuts without having to travel in the midst of a pandemic.

People are only just realizing the way restaurant servers want customers to leave their tables – but some are outraged
PROPER etiquette is always important, especially when eating at a restaurant.
Sometimes at an end of a meal, customers like to help out their servers by organizing their plates so it’s easier to clear off the table.
A restaurant server shared how she prefers customers to leave their table when they’re done eating[/caption]
However, some servers have revealed that customers can make a simple mistake that actually makes cleaning the table much harder.
TikToker Courtney Mae shared a video to respond to a comment asking servers to give a tutorial on how to properly stack dishes at the end of a meal.
The video shows a person scraping off leftover food onto one place and stacking the other places underneath it.
The utensils were then placed on the top plate while bowls and other small plates were also stacked.
“My preference of stacking for easy clean up. Had training going on so perfect timing! Of course, this is all my opinion and preference. Cups you do not stack together to avoid suction and getting stuck,” said Courtney.
“Some people prefer stacking, some don’t. All depends on the person.”
The video received more than 1,000 comments from users who shared their opinions.
“I already do that and people think I’m crazy,” wrote one person. “Why not make someone’s job easier if you can?”
Another added: “I was a server and I didn’t care if anybody did this. If you did, okay. If you didn’t, okay too.”
“Doesn’t always have to be this well done, but an effort is always appreciated,” said a third person.
However, other users disagreed and said they don’t enjoy cleaning up their tables.
“I believe part of the enjoyment of eating out is not having to do anything, especially scraping plates,” said one person. “I have been a server and still believe this!”
“Up next: taking the plates into the kitchen and rinsing them off before you leave,” joked someone else.
Despite the debate, many users felt the practice was common courtesy and said they would continue to do it when they went out.
“Never been a [server]. But I was taught this as it was respectful to the one serving you,” claimed a user.
However, she added that customers aren’t obligated to do this[/caption]

I’m a restaurant worker, if you knew the gross things that happen behind closed doors you would never want to eat out
A RESTAURANT worker has revealed some of the grossest tactics used in kitchens – and they may put you off your food.
TikTok user @Tequila.9 reeled off a list of ways servers and pot washers will keep things looking clean at surface level.
TikToker Tequila.9 made a series of shocking claims about working at a restaurant[/caption]
They include everything from scraping dishes with nails to changing the dates on food to make it appear as though they are in date.
And to make matters, worse, diners would never know about the techniques themselves.
Making the claims in a TikTok video, Tequila.9 said: “I promise the fork you’re eating with came out of the washer with spinach on it that just got rinsed off.
“I promise you that the table you’re eating off only got wiped down with a stank kitchen rag that was wet from dirty dishwater.
“I promise that whoever set your table was scraping crust off your plate with their nails immediately before you used it.”
She added: “And I’m willing to bet that if the health department showed up to the restaurant you’re eating at right now, everybody in the kitchen would be going crazy in the walk in fridge changing all the dates on the food.”
Viewers were quick to comment, with many other workers backing up the claims.
One person said: “I promise you that she’s telling the truth LMFAOOO.”
Another wrote: “It’s the same everywhere. It’s why I won’t work at my favorite places. I choose to be blissfully UNAWARE.”
Someone else added: “All these are 100% facts I’ve worked at numerous restaurants.”
Others, however, disagreed, with one person insisting: “This isn’t all restaurants.
“I’m a server at one place and bartender at another. Neither place is like that.”
Someone else said: “I can’t relate to this at all. The place I work at is the immaculate.”
A third wrote: “I’m so glad to work at a restaurant that don’t do this.
“This is the cleanest restaurant I’ve ever worked for and I love it.”
Customers React to McDonalds’ Almost Fully-Automated Restaurant
McDonalds tells CNN there’s “some interaction between customers and the restaurant team” when picking up orders or drinks. But at the special “order ahead” drive-through lane, your app-ordered bag of food is instead delivered to a platform by your car’s window using a vertical conveyor belt.
CNN reports that it’s targetted to customers on the go. For example, there’s dedicated parking spaces outside for curbside pickup orders, while inside there’s a room with bags to be picked up by food-delivery couriers (who also get their own designated parking spaces outside). But for regular customers, CBS emphasizes that “ordering is done through kiosks or an app — no humans involved there, either.”
But not all customers are loving it. “Well there goes millions of jobs,” one commenter on a TikTok video said about the new restaurant said.
“Oh no first we have to talk with Siri and Google [and] now we have to talk to another computer,” another one opined.
“I’m not giving my money to robots,” another commenter wrote. “Raise the minimum wage!”
Other customers had more personal concerns, expressing worries about how they could get their order fixed if it was incorrectly prepared or how to ask for extra condiments. “And if they forget an item. Who you supposed to tell, the robot? It defeats the purpose of using the drive thru if you have to go inside for it,” one consumer noted….
To be sure, not everyone had negative views about the concept. Some customers expressed optimism that the automated restaurant could improve service and their experience.
